Champagne
We had to start with the bubbly, whether it’s
the benchmark Champagne region with it’s
17 grand crus or inexpensive chardonnay grapes
from Marlborough, bubbles are the perfect way
to start or finish. We recommend both…

Burgundy
From the Cote du Nuits to the Cote du Beaune and
don’t forget Chablis, Burgundy is one of
our favorites. Pinot Noir and Chardonnay can be
a delicate balancing act. The key is to know your
producers- there are hundreds- so we have done
the work for you and here are some of our pics
to get you on the way.

Comprised of the right bank and the left bank
of the Dordogne River each with their own style
and history from the classified Chateaus of the

First recognized with the 1855 Classification
and still standing strong, well in most cases…these
are Cabernet Sauvignon focused with big tannins
and lots of structure.

The first declared DOCa in 1991 has given this
region both historical significance as well as
a new outlook on quality wine. The increased percentage
of garnacha in the typical tempranillo blend and
use of American oak has made these wines a bit
more worldly…not to mention a new generation
of young and enthusiastic winemakers.

Quite frankly these are most impressive wines
simply because of the labor involved in producing
fine wine in these regions.Sometimes we descibe
them with the dreadful sweet adjective, yet when
chosen properly the wines exhibit flowers and
stone fruits, pairing deliciously with many foods.
(Both a chef’s and a wino’s dream.)
Quality is based on ripeness therefore; we have
chosen to classify our selections in the same
manner. Don’t be shy!
